Menu Plan – Quick, Easy, Tasty (I hope)

Ok, I’m shamefully out of the habit of meal planning due to business trips and heavenly weather but I miss the ease and comfort in knowing what I am making everyday, particularly for dinner when I want to spend every minute I can outside enjoying spring! I have a new challenge since my spring CSA started last week so sides will be fluid (pretty much always veggies anyway)


Breakfast: Scrambled eggs, onions (CSA) fried in bacon fat, spinach, raw cheese

Lunch: Grilled salmon salad

Dinner: Cauliflower Mac & Cheese, topped with bacon instead of breadcrumbs

Prep: Soak Pancakes, thaw scallops


Breakfast: Buckwheat Pancakes, lemon curd

Lunch: Grilled chicken salad

Dinner: Grilled scallops, scalloped potatoes

Prep: Start English Muffins, thaw marinara sauce & ground beef


Breakfast: Sourdough English muffins, eggs, cheese

Lunch: Salad w/Leftover scallops

Dinner: Spaghetti (brown rice pasta, homemade marinara sauce, grass-fed beef)

Prep: Make Almond butter cookies


Breakfast: Almond Butter Breakfast cookies

Lunch: Leftover spaghetti

Dinner: BBQ grilled chicken, veggie TBD

Prep: Pick up CSA, Thaw ground lamb, start hamburger buns


Breakfast: Omelets

Lunch: Lamb Burgers

Dinner: Chicken in crock pot


Breakfast: Cinnamon Rolls

Lunch: Snacks

Dinner: Pizza Party
