Menu Plan – Greens & Things

We enjoyed a lovely night at beautiful Hilton Head Island and some delicious food (including my first experience with mussels which were absolutely fabulous and I can’t wait to attempt to recreate them!)

I picked up a few things for the week and I think my body was trying to tell me something because I ended up with a lot of green veggies. yum!

So,  this week is a ‘green’ menu plan 🙂


Lunch:  Hot dogs, sauerkraut, mustard, cheese

Dinner: Brown rice cooked in duck fat, Roasted asparagus

Prep: Start sourdough no-knead bread, thaw chicken, soak lentils for sprouting


Breakfast:  Eggs, spinach & cheese. mango slices

Lunch: Chicken & Rice miso soup with leftover rice and kale

Dinner:  Cauliflower soup, fondue , bread

Prep: Start sourdough english muffins, thaw scallops


Breakfast:  Green smoothies (Spinach, bananas, raw milk kefir, coconut oil)

Lunch: Leftover soup

Dinner:  Salad w/scallops

Prep: Thaw sausage


Breakfast: Egg sandwiches w/sourdough english muffins

Lunch: Salad

Dinner: Sprouted lentil soup w/italian sausage & broccoli rapini

Prep: Thaw salmon, thaw chicken


Breakfast: Coconut flour  Sourdough blueberry pancakes

Lunch: Leftovers

Dinner: Salmon, sautéed mushrooms, onions & spinach

Prep: prepare chicken with spice rub, make bacon bits


Breakfast: Eggs with bacon bits & spinach

Lunch: Liverwurst sandwiches

Dinner: Chicken in crockpot

Thanks for reading! I would love some feedback on this feature – am I boring everyone to tears with my (very) detailed menu plans? Does anyone have any ideas or suggestions for me?
