Meaty Meatballs

As promised, I am posting on my organic grass fed beef……….many posts will follow this one as we are loving it!  We are especially fond of meatballs in our family, and the ones I have made from this ground beef are outstanding.

Notice how there is no fat or water under the pan–the meatballs keep their shape instead of being “shrinking violets” leaving a residue underneath.

Here’s what I did:

Thaw, if frozen,  2 pounds lean organic grass fed ground beef

Mix together in a large bowl:

1 cup saltine cracker crumbs–food processor works well; you may also use bread crumbs

1/4 cup minced dry onion

1/2 cup milk

2 eggs

2 teaspoons salt

1/4 teaspoons pepper

1 teaspoon Worcestershire sauce


Mix thoroughly.

Shape into small balls–about one inch.  Place on a broiler pan or rack so you have something to catch any drippings.  Not likely, with this kind of beef!

Bake for approximately 18 minutes, or until browned, in a 375 degree oven.  Serve with your favorite condiment or sauce.  These keep several days in the refrigerator or can be frozen.
